Combine 2 cups finely chopped dill pickles, 1/2 cup finely diced red onion, and 1 medium jalapeño (seeded and diced) in a medium mixing bowl.
Add 1/4 cup chopped fresh cilantro and 2 tablespoons fresh lime juice.
Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
Stir all ingredients until evenly combined.
Taste and adjust salt, pepper, or lime juice as desired.
Cover the bowl and refrigerate for 15–20 minutes to allow flavors to meld.
Serve chilled with tortilla chips or as a topping for grilled meats, tacos, burritos, or burgers.
