Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, mash 2 very ripe bananas until smooth.
Add 0.5 cup creamy peanut butter and 1 teaspoon vanilla extract to the mashed bananas; stir until fully combined.
Stir in 1 cup rolled oats, 0.5 teaspoon baking powder, and a pinch of salt until the oats are just incorporated.
Fold in 0.25 cup mini chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 1 inch apart.
Bake for 12–15 minutes, or until the edges are lightly golden and the cookies are set.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
I cooked this for breakfast (single serving just for myself). It was incredibly tasty and filling. Quick and healthy as well.... I love it!
