Instructions

Peel the pearl onions, removing the outer skin.

Heat the extra virgin olive oil in a large skillet over medium heat.

Add the pearl onions and sauté until they turn lightly golden.

Sprinkle the sugar over the onions and let it dissolve.

Pour the red wine vinegar and water into the skillet.

Season with salt and pepper to taste.

Cover the skillet and cook over low heat for about 30 minutes, until the onions are tender and the sauce is glossy and thick.

Serve the sweet and sour pearl onions warm, as a side dish or on rustic bread.
