Ingredients

Fresh squid, cleaned and cut into rings300 g
Extra virgin olive oil2 tbsp
Garlic1 clove
Fresh parsley10 g
Lemon juice0.5 lemon
Salt
Black pepper

Instructions

Heat the extra virgin olive oil in a pan over medium heat.

Add the chopped garlic clove and sauté until it releases a pleasant aroma.

Add the squid rings and cook for about 2-3 minutes, until they turn opaque (do not overcook to avoid them becoming rubbery).

Squeeze the lemon juice over the squid, add salt and black pepper to taste.

Sprinkle with chopped fresh parsley and stir quickly.

Serve immediately, perhaps accompanied by a slice of rustic bread.
