Heat 1 tablespoon olive oil in a large skillet over medium heat until shimmering.
Add 2 cloves garlic, minced, and cook for 30 seconds to 1 minute until fragrant and lightly golden.
Add the entire 10-ounce bag of fresh spinach and use tongs to toss until wilted, about 2–4 minutes.
Remove skillet from heat and stir in 1/4 cup chopped fresh mint leaves and juice of 1/2 lemon.
Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper to taste; adjust seasoning if needed.
