Slice the zucchinis into thin rounds.

Heat one tablespoon of extra virgin olive oil in a pan and sauté the zucchinis for about 5 minutes, until they soften.

In a bowl, beat the eggs with the cooking cream, grated Parmesan cheese, salt, and pepper.

Add the sautéed zucchinis and diced scamorza cheese to the egg mixture.

Roll out the puff pastry in a baking dish.

Pour the filling over the puff pastry and level the surface.
