Fresh purslane200 g
Garlic1 clove
Extra virgin olive oil2 tablespoons
Salt
Lemon juice0.5 lemon

Instructions

Thoroughly wash the purslane and remove any tough stems.

Slice the garlic clove.

Heat the extra virgin olive oil in a pan over medium heat.

Add the sliced garlic and sauté for about one minute.

Add the purslane and a pinch of salt.

Sauté everything for about 5 minutes, until the leaves wilt but remain bright green.

Turn off the heat and add a splash of fresh lemon juice.

Serve hot or at room temperature, perhaps accompanied by crusty bread.
