Large pomelo (peeled and sliced)1 piece
Red onion (finely chopped)0.5 piece
Fresh cilantro (chopped)0.5 bunch
Carrot (grated)1 piece
Cucumber (sliced into half-moons)0.5 piece
Roasted peanuts (coarsely chopped)2 tablespoons
Olive oil2 tablespoons
Lemon juice1 tablespoon

Instructions

Peel and slice the pomelo, then place it in a large bowl.

Finely chop the red onion, chop the fresh cilantro, grate the carrot, and slice the cucumber into half-moons. Add all to the bowl.

Add olive oil, lemon juice, honey, and salt.

Mix all ingredients well.

Sprinkle with coarsely chopped roasted peanuts.
