Slice the scamorza cheese into 1/2- to 3/4-inch-thick rounds.

Wash the cherry tomatoes and halve them.

Heat a skillet or griddle over medium-high heat and add a drizzle of extra-virgin olive oil.

When the oil is hot, add the scamorza slices and cook for about 2-3 minutes per side, until golden brown and bubbly.

Transfer the cheese to a serving plate.

Arrange the tomatoes around or on top of the cheese, sprinkle with dried oregano, season with salt and freshly ground black pepper, and drizzle a bit more olive oil over the top.
