Mix the fine salt and sugar in a bowl.

Create two small wells in the salt and sugar mixture.

Gently place the egg yolks into the wells.

Completely cover the yolks with the remaining salt and sugar mixture.

Place the bowl in the refrigerator and let marinate for 24 hours.

After the time has passed, carefully remove the yolks from the mixture and brush off any excess salt and sugar.

Place the yolks on a baking sheet lined with parchment paper.

Bake in the oven at 194°F (90°C) for about 1 hour, until the yolks are dry.

Let cool and grate the marinated yolks over pasta, salads, or toasted bread.
