Lampascioni500 g
Extra virgin olive oil3 tablespoons
Red wine vinegar1 tablespoon
Garlic1 clove
Salt1 teaspoon
Black pepper0.5 teaspoon
Chopped fresh parsley1 tablespoon

Instructions

Peel the lampascioni and soak them in water overnight to remove some of the bitterness.

Drain the lampascioni and boil them in salted water for about 30 minutes, until tender.

Drain them and, while still warm, season with extra virgin olive oil, minced garlic, red wine vinegar, salt, and black pepper.

Mix well and finish with a sprinkle of chopped fresh parsley.

Serve the lampascioni as an appetizer or side dish.
