Preheat the oven to 375°F (190°C).
Slice each sub roll lengthwise without cutting all the way through.
On the bottom half of each roll, layer 2 slices of provolone cheese.
Top each with 2 ounces pepperoni, 2 ounces Genoa salami, and 2 ounces capicola (or spicy ham).
Place the prepared sandwiches on a baking sheet and bake for 8–10 minutes until the cheese is melted and the bread is lightly golden.
While the sandwiches bake, thinly slice ½ medium tomato and ¼ small red onion.
Measure out ¼ cup each of shredded iceberg lettuce, dill pickle slices, and banana pepper rings.
Remove sandwiches from the oven and immediately top with lettuce, tomato, onion, pickles, and pepper rings.
Drizzle each sandwich with 1 tablespoon olive oil and ½ tablespoon red wine vinegar.
Sprinkle ¼ teaspoon dried oregano and a pinch of salt and black pepper over each sandwich.
Close the sandwiches and serve warm.
