Place ground allspice, dried thyme, light brown sugar, kosher salt, black pepper, cayenne pepper, garlic powder, onion powder, ground nutmeg, ground cinnamon, and ground ginger into a small bowl.
Use a spoon or small whisk to thoroughly combine until the blend is uniform with no clumps.
Rub 1–2 tablespoons of seasoning per pound of meat, then marinate in the refrigerator for at least 2 hours or overnight for best flavor.
Store the seasoning in an airtight container in a cool, dark place for up to 6 months.
