In a small bowl, add the chili powder, ground cumin, smoked paprika (or regular paprika if you prefer), garlic powder, onion powder, dried oregano, salt, black pepper, and cayenne pepper (optional, for a little kick!).
Whisk all spices together thoroughly until no clumps remain and the color is uniform.
Transfer the seasoning blend to a small airtight container and store it in a cool, dark place; it will stay fresh for up to 6 months.
To season chicken: for each pound of ground or shredded chicken, use about 2 tablespoons of the seasoning. After cooking and draining the chicken, stir in the seasoning with 1/4 cup water or chicken broth and simmer for a few minutes until the liquid is absorbed and the chicken is evenly coated.
