Fresh zucchini flowers8

Cold sparkling water150 ml
Large egg1

Sunflower oil300 ml

Gently clean the zucchini flowers and remove the stamens.

In a bowl, whisk together the flour, egg, salt, and cold sparkling water until you get a smooth batter (do not overmix!).

Heat the sunflower oil in a deep pan.

Dip each flower into the batter, then fry in the hot oil until golden and crispy, about 2 minutes per side.

Drain the fried flowers on paper towels and sprinkle with a little extra salt.

Serve immediately, perhaps accompanied by a refreshing drink.
