Ingredients

Beef (diced)400 g
Olive oil2 tbsp
Onion (chopped)1 large
Garlic (crushed)2 cloves
Carrots (sliced)2 medium
Potatoes (diced)2 medium
Green pepper (chopped)1 medium
Tomato (peeled and chopped)1 medium
Tomato paste1 tbsp
Salt1 tsp
Black pepper0.5 tsp
Ground red pepper1 tsp
Water480 ml
Fresh parsley (chopped, for garnish)

Instructions

Sauté the diced beef in olive oil in a large pot.

When the meat changes color, add the chopped onion and crushed garlic, sauté until the onions soften.

Then add the sliced carrots, diced potatoes, and chopped green pepper, cook while stirring for a few minutes.

Add the peeled and chopped tomatoes along with the tomato paste, stir.

Add salt, black pepper, and ground red pepper.

Pour 480 ml of water into the pot, stir.

Cover the pot and cook on low heat for about 45-50 minutes until the meat is tender and the vegetables are cooked.

Before serving, sprinkle chopped fresh parsley on top.
