Add 2 cloves fresh garlic (minced), 1 teaspoon dried thyme, and 0.5 teaspoon freshly ground black pepper; whisk until sugar is fully dissolved.
Place 1.75 pounds steak in a shallow dish or sealable bag and pour the marinade over it, ensuring the steak is fully coated; seal or cover.
Refrigerate and marinate thinner cuts for 30 minutes to 2 hours or thicker cuts for 4 to 8 hours.
When ready to cook, remove steak from marinade and pat dry with paper towels; discard leftover marinade.
Preheat grill, broiler, or a hot cast-iron skillet; cook steak to desired doneness (130–135F / 54–57C for medium-rare).
Let the steak rest for 5–10 minutes, then slice against the grain and serve.
