Preheat the oven to 400°F (205°C) and grease a 13×18-inch sheet pan with cooking spray or butter.
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
In a separate bowl, whisk the large egg, whole milk, melted unsalted butter (or vegetable oil), and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and stir gently until just combined, leaving a few small lumps.
Spread the batter evenly on the prepared sheet pan.
If using, sprinkle fresh blueberries or chocolate chips evenly over the batter.
Bake for 15–20 minutes, until the edges are golden brown and a toothpick inserted into the center comes out clean.
Allow the pancakes to cool in the pan for a few minutes, then cut into squares or rectangles with a pizza cutter or sharp knife.
Serve warm with maple syrup and butter.
