Cut 1 pound of thick-cut bacon into small, 1/4 to 1/2-inch pieces.
Spread the bacon pieces in a single layer on the prepared baking sheet, ensuring they aren’t crowded.
Bake for 15–20 minutes, stirring halfway through, until the bacon bits are deeply golden brown and crispy.
Transfer the hot bacon bits with a slotted spoon onto a plate lined with paper towels to drain excess fat, then let cool completely.
Once cooled, crumble any larger pieces with your fingers.
Store cooled bacon bits in an airtight container in the refrigerator for up to 5 days.
