Bring a pot of water to a boil and immerse the cotechino still sealed in its vacuum packaging. Let it cook on low heat for about 2 hours, following the instructions on the package.

Meanwhile, in a saucepan, add the lentils, diced carrot, chopped celery stalk, chopped onion, bay leaves, and a pinch of salt. Cover with water and cook over medium heat until the lentils are soft (about 30-40 minutes).

Peel the potatoes and boil them in salted water until tender. Drain and mash them with a fork or potato masher.

Add extra virgin olive oil, salt, and pepper to the potatoes and mix until you get a creamy puree.

When the cotechino is ready, remove it from the packaging, slice it, and serve it on a bed of lentils, accompanied by the mashed potatoes.
