Gather and cool 2 cups of cooked chicken, then shred or dice into bite-sized pieces.
Finely dice 1 stalk of celery, 1/4 cup red onion, and 1/2 small bell pepper.
Chop 1/4 cup fresh cilantro.
In a medium bowl, combine chicken, celery, red onion, bell pepper, and cilantro.
Add 1/2 cup mayonnaise and 1 tablespoon fresh lime juice; stir to coat. Taste and add the second tablespoon of lime juice if desired.
Season with salt and freshly ground black pepper to taste and stir again.
Cover and chill in the refrigerator for at least 30 minutes to let flavors meld.
Serve on sandwiches, lettuce cups, crackers, or tortilla chips.
