In a small saucepan over medium heat, combine milk and salt and bring to a gentle boil.
Once bubbling, slowly whisk in cream of rice cereal, stirring continuously to avoid lumps.
Reduce heat to low and simmer, stirring occasionally, for 3–5 minutes until thick and creamy.
Remove saucepan from heat and stir in granulated sugar until dissolved.
If using, stir in vanilla extract.
Serve hot, optionally topped with a pat of butter, a sprinkle of cinnamon, or fresh berries.
