In a medium bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, and ground cinnamon until well combined.

Dip each slice of Brioche bread into the egg mixture, allowing it to soak for a few seconds on each side until the bread is custardy but not falling apart.

Heat a nonstick skillet or griddle over medium heat and add the unsalted butter.
