Heat a large skillet over medium-high heat.
Add 1 pound of lean ground beef and break it up with a spoon.
Cook the beef, stirring occasionally, until completely browned, about 7–8 minutes.
Drain off any excess fat.
Season the cooked beef with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper; set aside to cool slightly.
In a medium bowl, whisk together 0.5 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon yellow mustard, 2 tablespoons sweet pickle relish, 1 teaspoon white vinegar, 1 teaspoon granulated sugar, 0.5 teaspoon garlic powder, 0.5 teaspoon onion powder, and 0.25 teaspoon paprika until smooth.
Taste the special sauce and adjust sugar or vinegar if desired.
In a large serving bowl, place 6 cups of chopped iceberg lettuce.
Top the lettuce with the seasoned beef, 1 cup shredded sharp cheddar cheese, 0.25 cup finely diced yellow onion, and 0.5 cup dill pickle chips.
Drizzle the special sauce over the salad and either toss to combine or let diners add sauce to their liking.
Serve immediately.
