Instructions

Preheat the oven to 350°F (180°C).

Place the cod fillets in a baking dish.

Season the fillets with extra virgin olive oil.

Sprinkle minced garlic, lemon zest, salt, and black pepper on top.

Arrange the halved cherry tomatoes around the fish.

Squeeze lemon juice over everything.

Add chopped fresh parsley.

Bake for about 20 minutes, until the fish is tender and the cherry tomatoes are roasted.

Serve hot, perhaps accompanied by crusty bread.
