Preheat your oven to 400°F and line a large baking sheet with parchment paper or foil; place an oven-safe wire rack on top if available.
Pat the large sea scallops very dry using paper towels to remove all moisture.
Cut each slice of thin-cut bacon in half crosswise and wrap one half-slice around each scallop; secure with a wooden toothpick.
Arrange the bacon-wrapped scallops in a single layer on the wire rack; season with a pinch of salt (optional) and a grind of black pepper.
Bake for 10 minutes in the preheated oven.
While baking, whisk together the maple syrup and black pepper in a small bowl.
After 10 minutes, remove the baking sheet and brush each scallop with the maple syrup mixture; return to the oven.
Continue baking for another 5–10 minutes, or until bacon is crispy, scallops are opaque, and internal temperature reaches 145°F.
Carefully remove toothpicks and serve immediately while bacon is crisp and scallops are tender.
