Put 250g finely chopped dill gherkins, 1 small red onion, finely diced, and 1 medium jalapeño, deseeded and finely diced, into a medium bowl.
Stir in 15g chopped fresh coriander and 30ml fresh lime juice.
Season with 1/2 tsp salt and 1/4 tsp black pepper.
Mix everything together until well combined.
Taste and adjust salt, pepper or lime juice to taste.
Cover and chill in the fridge for 15-20 minutes to allow the flavours to meld.
Serve chilled with tortilla chips, or use as a topping for grilled meats, tacos, burritos or burgers.
