Calf's liver300 g
White onions2 large
Extra virgin olive oil3 tbsp
Unsalted butter30 g
Dry white wine60 ml
Salt
Black pepper
Chopped fresh parsley1 tbsp

Instructions

Thinly slice the white onions.

Heat the extra virgin olive oil and unsalted butter in a large pan over low heat.

Add the onions and cook slowly until they become soft and golden, about 15 minutes.

Push the onions to the sides of the pan, increase the heat, and add the slices of calf's liver.

Cook the liver for 2-3 minutes on each side, keeping it tender.

Deglaze with the dry white wine and let the alcohol evaporate.

Mix everything well, season with salt and black pepper to taste.

Sprinkle with chopped fresh parsley before serving.
