Swiss chard1 bunch
Rice200 g
Onion1 large
Olive oil2 tablespoons
Tomato paste1 tablespoon
Salt1 teaspoon
Black pepper1 teaspoon
Red pepper flakes1 teaspoon
Dried mint1 teaspoon
Lemon juice0.5 unit
Hot water240 ml

Wash the Swiss chard leaves and blanch them lightly in boiling water for 2-3 minutes, then drain and let cool.

Finely chop the onion. Heat the olive oil in a pan, add the onion and sauté until it turns translucent.

Add the rice, tomato paste, salt, black pepper, red pepper flakes, and dried mint. Stir and cook for another 2-3 minutes.

Remove the filling from the heat and let it cool slightly.

Place some of the prepared filling in the centre of each Swiss chard leaf and fold the edges to roll.

Arrange the rolls in a pot. Drizzle with the juice of half a lemon and hot water.

Cover the pot and cook on low heat for about 30 minutes.

Serve hot or warm.
