Preheat the oven to 180°C (350°F).
Cut the courgettes in half lengthwise and carefully scoop out the flesh, setting it aside.
Finely chop the onion and garlic.
In a frying pan, heat 1 tablespoon of extra virgin olive oil and sauté the onion and garlic until golden.
Add the minced beef and the chopped courgette flesh, cook until the meat is well browned and the vegetables are soft.
Let the mixture cool slightly, then add the egg, grated Parmesan cheese, breadcrumbs, salt, and pepper. Mix well.
Fill the courgette halves with the prepared filling.
Place the stuffed courgettes on a baking tray and drizzle with the remaining extra virgin olive oil.
Bake in the oven for about 30 minutes, until the courgettes are golden and the filling is cooked through.
Serve hot.
