Milk60 ml

Lemon zest1
Apricot jam200 g

Instructions

Preheat the oven to 180°C and grease a tart tin.

Beat the eggs with the sugar until the mixture is frothy.

Add the vegetable oil, milk, and grated lemon zest, continuing to mix.

Sift the plain flour with the baking powder and gently fold them into the mixture.

Pour the batter into the prepared tin and level the surface.

Bake in the oven for about 20 minutes.

Allow the cake to cool, then slightly hollow out the centre surface.

Fill the surface with apricot jam.

Serve the soft tart for breakfast or as a snack.
