Instructions

Slice the courgettes into thin rounds.

Heat a tablespoon of extra virgin olive oil in a frying pan and sauté the courgettes for about 5 minutes, until softened.

In a bowl, beat the eggs with the cooking cream, grated Parmesan, salt, and pepper.

Add the sautéed courgettes and diced scamorza to the egg mixture.

Roll out the puff pastry in a baking tin.

Pour the filling onto the puff pastry and level the surface.

Bake in a preheated oven at 180°C for about 30 minutes, until the tart is golden and fragrant.

Allow to cool slightly before serving.
