Heat half the olive oil in a large frying pan over a medium-high heat until the oil shimmers.
Add the turkey sausage meat, break it up with a spoon and cook for 5–7 minutes until browned and cooked through (74°C internal temperature).
Transfer the cooked sausage to a plate, leaving any cooking juices in the pan.
Add the remaining olive oil, then the chopped onion and peppers. Fry for 7–10 minutes until just tender.
Stir in the minced garlic and dried mixed herbs and cook for 1 minute until fragrant.
Pour in the chopped tomatoes with their juices, stir to combine and bring to a gentle simmer.
Return the turkey sausage to the pan, stir well, then season with salt and black pepper.
Reduce the heat to medium-low, cover and simmer for 5–7 minutes to allow the flavours to meld.
Taste and adjust the seasoning if necessary, then serve hot with rice, pasta or on its own.
