Instructions

Peel and grate the potatoes and onion.

Squeeze the grated potatoes and onion well to remove excess water.

Place the vegetables in a bowl and add the egg, flour, salt, and black pepper.

Mix well until you get a homogeneous mixture.

Heat the extra virgin olive oil in a non-stick frying pan over medium heat.

Spoon portions of the mixture and flatten them slightly in the pan to form small fritters.

Cook for about 5 minutes on each side, until the rösti are golden and crispy.

Serve the potato rösti hot, just removed from the pan.
