Ingredients

4
Unsalted Butter227 g
Plain Flour250 g
Caster Sugar100 g
Salt0.3 teaspoon
Light Brown Sugar220 g
Light Corn Syrup240 ml
Eggs3 large
Vanilla Extract2 teaspoons
Pecan Halves240 g

Instructions

1

Preheat your oven to 175°C (350°F). Line a 23x33 cm baking tray with baking parchment or lightly grease it.

2

In a medium bowl, mix together the melted unsalted butter, plain flour, caster sugar, and salt until a crumbly dough forms.

3

Press the dough evenly into the bottom of the prepared tray to form the crust.

4

Bake the crust for about 18-20 minutes, or until just golden around the edges.

5

While the crust bakes, whisk together the light brown sugar, light corn syrup, eggs, and vanilla extract in a large bowl until smooth.

6

Pour the filling mixture over the hot crust, then sprinkle the pecan halves evenly on top.

7

Return the tray to the oven and bake for 25-30 minutes, or until the filling is set and only slightly jiggles in the centre.

8

Remove from the oven and let the bars cool completely in the tray before slicing into squares.

9

Serve and enjoy your gooey, nutty pecan pie bars!
