Ingredients

Short pasta (mezze maniche or similar)180 g
Pumpkin, peeled and cut into cubes350 g
Small onion, finely chopped1
Extra virgin olive oil2 tbsp
Vegetable stock500 ml
Grated Parmesan cheese30 g
Salt
Black pepper

Instructions

Sauté the finely chopped onion in extra virgin olive oil in a large pan until soft.

Add the pumpkin cut into cubes and cook for about 10 minutes, stirring occasionally.

Pour in the vegetable stock, cover and let it simmer until the pumpkin is very tender.

Meanwhile, cook the pasta in plenty of salted water until al dente.

Mash part of the pumpkin in the pan to achieve a creamy texture.

Drain the pasta, reserving some cooking water, and add it to the pan with the pumpkin.

Add the grated Parmesan cheese and some pasta cooking water. Stir well until you get a creamy and glossy consistency.

Season with salt and black pepper to taste. Serve with extra grated Parmesan cheese on top.
