Water or light vegetable stock700 ml
Smoked provola cheese100 g

Instructions

In a large pot, heat the extra virgin olive oil and sauté the onion, carrot, and celery until soft.

Add the diced potatoes and let them flavour for a few minutes, stirring.

Pour in the water or light vegetable stock, bring to a boil, and cook until the potatoes are tender.

Add the pasta directly to the pot and cook, stirring often, until the pasta is al dente and the mixture is creamy.

Remove from the heat and stir in the smoked provola cheese cubes until melted.

Season with salt and black pepper to taste.

Finish with chopped fresh parsley before serving.
