Instructions

Slice the courgettes into rounds.

Heat the extra virgin olive oil in a large non-stick frying pan over medium heat.

Add the chopped garlic clove and sauté for about a minute until fragrant.

Add the courgettes and cook for 8-10 minutes, stirring occasionally, until they are soft and slightly golden.
