Heat a non-stick frying pan over a low to medium heat. Add the butter or oil and swirl to coat the pan.
Carefully crack each egg into the pan, spacing them apart, then season with salt and pepper.
Cook the eggs undisturbed for 2-3 minutes, until the whites are set and opaque around the edges.
Gently slide a thin spatula under each egg and flip it over. Cook for another 15-30 seconds to set a thin film on top of the yolk.
Transfer the eggs to a plate immediately and serve straight away while still hot.
