Preheat the oven to 200°C.
Line a baking tray with greaseproof paper or foil.
Pat the chicken thighs dry with kitchen paper to remove any excess moisture.
In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, paprika and dried thyme.
Drizzle the olive oil over the chicken thighs, then sprinkle on the seasoning mix and rub it in to coat both sides.
Arrange the seasoned thighs in a single layer on the prepared tray and bake for 20–25 minutes, or until an instant-read thermometer inserted into the thickest part reads 74°C.
Remove from the oven and leave to rest on the tray for 5 minutes before serving.
