Digestive biscuits200 g
Melted butter100 g
Cream cheese400 g
Double cream200 ml
Icing sugar100 g
Vanilla extract1 tsp
Mixed berries (raspberries, blueberries, blackberries)200 g
Mixed berry jam2 tbsp

Instructions

Crumble the digestive biscuits and mix them with the melted butter.

Press the mixture into the base of a springform tin to form the crust.

Place the base in the fridge while you prepare the filling.

Whip the cream cheese, double cream, icing sugar, and vanilla extract until smooth.

Spread the cream mixture over the biscuit base and chill in the fridge for several hours.

For the topping, gently warm the mixed berry jam and stir in the fresh berries.

Spread the topping over the cheesecake before serving.
