Ingredients

Veal escalopes300 g
Plain flour2 tbsp
Extra virgin olive oil2 tbsp
Unsalted butter30 g
Lemon (juice and zest)1
Dry white wine80 ml
Salt
Black pepper
Fresh parsley (optional)

Instructions

Lightly flour the veal escalopes on both sides.

Heat the olive oil and butter in a pan over medium heat.

Add the veal escalopes and brown them on both sides, then set aside.

Deglaze the pan with the dry white wine and let it reduce for a few minutes.

Add the lemon juice and zest, mix well.

Return the veal escalopes to the pan and let them soak in the sauce for 2-3 minutes.

Season with salt and pepper to taste.

Serve with a sprinkle of fresh parsley, if desired.
