Thoroughly wash the lemons and slice them thinly, keeping the peel and removing the seeds.

Place the lemon slices in a large bowl and cover them with water. Leave to soak overnight to soften the peel and reduce bitterness.

The next day, drain the lemons and transfer them to a saucepan.

Add 500 ml of fresh water and bring to a boil over medium heat.

Cook for about 30 minutes, stirring occasionally.

Add the sugar and continue cooking over low heat, stirring often, until the marmalade thickens and becomes glossy (about 45-60 minutes).

Pour the hot marmalade into sterilised jars, seal well and let cool.

Store in a cool, dry place. Once opened, keep the marmalade refrigerated.
