Lampascioni500 g
Extra virgin olive oil3 tbsp
Red wine vinegar1 tbsp
Garlic1 clove
Salt1 tsp
Black pepper0.5 tsp

Peel the lampascioni and soak them in water overnight to remove some of the bitterness.

Drain the lampascioni and boil them in salted water for about 30 minutes, until tender.

Drain them and, while still warm, dress with extra virgin olive oil, chopped garlic, red wine vinegar, salt, and black pepper.

Mix well and finish with a sprinkle of chopped fresh parsley.

Serve the lampascioni as a starter or side dish.
