Whole milk1 litre
Kefir grains2 tablespoons

Pour 1 litre of whole milk into a clean glass jar.

Add 2 tablespoons of kefir grains to the milk.

Cover the jar with a clean cloth and secure it with a rubber band or string, allowing air to circulate.

Leave to ferment at room temperature (on the kitchen counter) for about 24 hours, until the milk thickens and develops a slightly sour aroma.

Strain the kefir grains with a sieve: you can reuse them for the next batch.

Transfer the prepared kefir to the fridge and enjoy it fresh at breakfast or as a snack.
