Put ground allspice, dried thyme, light brown sugar, sea salt, black pepper, cayenne pepper, garlic powder, onion powder, ground nutmeg, ground cinnamon and ground ginger into a small bowl.
Stir with a spoon or small whisk until the mixture is well combined and free of lumps.
Rub 1–2 tbsp of seasoning per 450 g of meat, then marinate in the fridge for at least 2 hours or, for the best flavour, overnight.
Store the seasoning in an airtight container in a cool, dark place for up to 6 months.
