In a large bowl, combine the warm water, active dried yeast, and sugar. Stir and let sit for about 5-10 minutes until the mixture becomes bubbly.
Add the plain flour, salt, and olive oil to the yeast mixture.
Mix until a dough forms, then knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
Punch down the dough and shape it into a loaf. Place it on a baking tray lined with baking parchment.
Cover and let the loaf rise again for about 30-40 minutes, until puffy.
Preheat the oven to 200°C (400°F).
Bake the bread for 25-30 minutes, or until golden brown and crusty.
Let cool slightly before slicing. Serve warm, optionally with olive oil for dipping.
