Ingredients

Green Lentils200 g
Onion1 medium
Carrot1 piece
Potato1 piece
Tomato Paste1 tbsp
Olive Oil2 tbsp
Salt1 tsp
Black Pepper1 tsp
Red Pepper Flakes1 tsp
Water1.2 litres
Lemon (optional, for serving)

Instructions

Rinse the green lentils thoroughly.

Chop the onion, carrot, and potato into small pieces.

Heat the olive oil in a pot and sauté the onion.

Add the tomato paste and sauté for a few more minutes.

Add the chopped carrot and potato and stir.

Add the green lentils and water to the pot.

Add salt, black pepper, and red pepper flakes.

Bring all the ingredients to a boil together.

Once the lentils are soft, your soup is ready.

You can optionally squeeze lemon when serving.
