Peel and thinly slice the garlic cloves. Break the dried chillies in half if you prefer less heat. Finely chop the fresh parsley, reserving a little for garnish.
Heat a frying pan over a medium-high heat and add the extra virgin olive oil.
Once the oil is hot, add the sliced garlic and chillies, stirring constantly, until the garlic just begins to turn light golden.
Add the thawed, drained prawns to the garlic. Season with a pinch of salt and cook for 2–3 minutes, stirring occasionally, until the prawns turn pink and opaque.
Remove the pan from the heat and stir in most of the chopped parsley.
Serve immediately, while still hot, either in the pan or transferred to a plate. Garnish with the reserved parsley and serve with crusty bread.
