Ingredients

Plain flour150 g
Milk (dairy or plant-based)200 ml
Sugar2 tbsp
Vegetable oil1 tbsp
Baking powder1 tsp
Salt
Jam (to serve, optional)
Fresh fruit (to serve, optional)

Instructions

In a bowl, mix plain flour, sugar, baking powder and a pinch of salt.

Add the milk (dairy or plant-based) and vegetable oil. Stir until you get a smooth, lump-free batter.

Heat a non-stick frying pan and lightly grease it with a little oil.

Pour a ladle of batter for each pancake into the hot pan.

Cook the pancakes for 2-3 minutes on each side, until golden.

Serve the pancakes warm with jam and fresh fruit as desired.
